| Coconut milk and chickpeas are one of my favorite ingredient combinations. Together they create a rich, earthy dance of flavors that is my definition of comfort food. Add in some spinach and sweet potatoes, and you have a vegetarian dish that will delight even the staunchest meat-eater. |

Looking for a vegan medley full of flavor and nutrients? Look no further!
Let’s start by talking about fiber. Want to make one change to your nutrition that can have an outsized impact? Add more fiber to each meal.
Some of the benefits of fiber include feeding your gut’s good bacteria, reducing blood sugar spikes, lowering cholesterol, and relieving constipation. This recipe has 12 grams (g) per serving, which is a decent percentage of the 25 to 38 g daily recommendation.
Should you be concerned that this meal only provides 11 g of protein? In my opinion, no. The standard American diet is actually flush with protein, so chances are you’re already getting plenty in your diet. If you require extra protein – for example, maybe you’re trying to put on muscle mass, or you’re pregnant – you can double the amount of chickpeas in the recipe, or add some cooked chicken.
And if you’re watching your saturated fat intake, consider using low fat coconut milk instead of the full-fat used in the original recipe.
Otherwise, enjoy this warming, easy-to-throw-together meal! |
