Beet, leek, and sweet potato breakfast hash with eggs
I live by the philosophy that the best breakfasts are quick ones. While this recipe isn't necessarily grab-and-go, it's still relatively easy to put together in 25 minutes, maybe less if you're quick with a knife. You could also prep the potatoes, beets, and leeks ahead of time, so you'd only need to microwave them and fry an egg before serving. The fact that it's one-pot (technically one-skillet) has to count for something, too.
This dish also has some undeniable nutritional value. Veggies? Check. Sweet potatoes, beets, and leeks are rich in vitamin A and fiber, which you can find 6.4 grams (g) of in this recipe. Protein? Check. There are 18 g per serving, mostly from the eggs. All of this and it's under 400 calories. What a way to start your day!
