It's National Carbonara Day (supposedly), and what better way to celebrate than with this 15-minute carbonara? This dish is lower in calories, sugar, and carbs than a traditional pasta dish while being high in protein and fiber.
Kale is the star of this recipe, and it has some health benefits too. It's high in nutrients such as vitamin C and flavonoids, which may help protect your brain.
Traditionally, carbonara is made with fatty cured pork. However, this recipe does not include any meat, so it's suitable for vegetarians. If you would like to add meat, keep in mind that cured pork, such as bacon, can be high in saturated fat. Options that are lower in saturated fat include grilled chicken, lean ground beef, and low fat bacon.
