Autumn stew with pumpkin and chickpeas
Nothing says autumn like stew, and this one in particular delivers on seasonal taste. It's packed with earthy ingredients, including carrots, onions, chickpeas, pumpkin puree, and fresh sage. The best part? Even though it's a stew, the whole thing comes together in around 15 minutes: perfect for a weeknight.
Simply brown the carrot, onion, and sage in a pan for 5 minutes, then add the chickpeas, pumpkin puree, and vegetable broth. When this mixture reaches a boil, add the orzo. Once the orzo is cooked through, it's ready to serve, topped with nutritional yeast if desired.
This recipe is vegan. However, if you do not follow a vegan diet, you can substitute the nutritional yeast with a cheese, such as mozzarella or Parmesan. You may also consider serving this dish with slices of a buttered baguette.
