Recipe of the Week
Almond butter chocolate chunk cookies
Most pies are too sweet for me. I'm much more inclined to reach for cookies or bars after dinner. And besides, pies are a bit more labor-intensive, and I already spend so many hours in the kitchen around the holidays.
That's why I'm choosing to highlight cookies today.
These almond butter treats aren't your typical cookie — they're gluten-free, low carb, dairy-free, and diabetes-friendly. Might I mention they're incredibly tasty, easy to make (just 35 minutes!), and customizable?
Just look at Megan Severs' testimony: "I tried making a nut-free version of these cookies as an allergy-friendly snack to send to school. I replaced the almond butter with sunflower seed butter and used vanilla extract instead of almond extract. The flavor of the sunflower seed butter was intense, but these were a huge hit with everyone in my house. They were also really fast and easy to make."
